The great Sauternes wines can be kept for between 30 and 50 years.<\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li><b><span style=\"font-size: 14px;\">The quality of Sauternes<\/span>\u00a0<\/b><\/li>\n<\/ul>\n<p>The quality of <strong>Sauternes<\/strong> has its origins in a legend that has been passed down through the generations. It tells of a landowner who was late in supervising his harvest and found some grapes over-ripe or almost rotten with a kind of mold. Nevertheless, he decided to go ahead with the harvest, and to his great surprise, he discovered a particular aroma in the wine produced from these grapes. Known as \"noble rot\", this disease quickly became a sign of quality to be noticed before the grapes were harvested, which was done in selective batches. These very late harvests produced enriched wine that required aging for several years. From fermentation in vats or barrels to ageing in oak barrels, Sauternes rids itself of particles and acquires an aromatic evolution.<\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li><span style=\"font-size: 14px;\"><b>The great Sauternes<\/b><\/span><\/li>\n<\/ul>\n<p>Appellation d'origine contr\u00f4l\u00e9e (AOC) <strong>Sauternes<\/strong> depends on the official Bordeaux wine classification of 1855.<\/p>\n<p>Prestigious Sauternes wines give star billing to <a title=\"Buy Yquem\" href=\"https:\/\/www.comptoirdesmillesimes.com\/chateau-yquem\">Ch\u00e2teau d'Yquem<\/a> the only Sauternes classified Premier Cru Sup\u00e9rieur since 1855. Sometimes well above the cost of production, these prices are propelled upwards by the reputation enjoyed by the owner, the esteem in which the wines are held by buyers, the scale of demand and wine speculation.
