All Domaines Partenaires Guides<\/a><\/strong><\/p><\/blockquote>\n<p><span id=\"p131\">Ch\u00e2teau Simone has been owned by the Rougier family since 1830.<\/span><span id=\"p2\">\u00a0Thanks to the success of these wines, it is now part of the Provencal territory as the jewel of the appellation.\u00a0<span id=\"80\" class=\"s-rg-t\">\u00a0\"AOC<\/span>\u00a0Palette\u00a0<span id=\"81\" class=\"s-rg-t\">\u00a0\"<\/span>\u00a0which covers an area of 50 hectares.<\/span><span id=\"p3\"> The chateau is spread over an area of 20 hectares on the northern slopes of wooded hills of the\u00a0<span id=\"103\" class=\"s-rg-t\">Montaignet<\/span> between 150 and 200 m altitude.<\/span><span id=\"p135\"> The ch\u00e2teau is dominated by pine forests, the rocky mass of Mont St Victoire and the river Arc, all of which create a microclimate. <\/span><span id=\"p6\">The exposure of the hillsides, the geological structure of the<span id=\"115\" class=\"s-rg-t\">scree<\/span> limestone and the microclimate are obvious elements that make it part of a high-class cru.<\/span><span id=\"p136\">\u00a0<\/span><\/p>\n<h2 style=\"text-align: center;\"><span style=\"font-size: 14pt;\">History of the Ch\u00e2teau :\u00a0<\/span><\/h2>\n<p><span id=\"p136\">Visit <strong>family\u00a0<span id=\"137\" class=\"s-bl-t\">Rougier<\/span><\/strong>who have owned this vineyard for two centuries now, improved the entire vineyard after the phylloxera crisis.<\/span><span id=\"p141\"> Some plots, like Cep, are over 100 years old.<\/span><\/p>\n<p><span id=\"p142\">The tradition has been carried on for a long time now, where vine-growing remains faithful to practices that do not involve the use of chemicals or other ecologically unfriendly products.<\/span><span id=\"p146\">\u00a0Some varieties have survived to the present day.<\/span><span id=\"p11\"> The red and ros\u00e9 wines come from 80 % of Grenache grapes,\u00a0<span id=\"28\" class=\"s-rg-t\">Mourv\u00e8dre<\/span>\u00a0and Cinsault.<\/span><span id=\"p147\">\u00a0Some contain other grape varieties in which Syrah dominates,\u00a0<span id=\"149\" class=\"s-bl-t\">le Manosquet<\/span>the\u00a0<span id=\"148\" class=\"s-rg-t\">Castet<\/span>the\u00a0<span id=\"151\" class=\"s-bl-t\">Carignan, Cabernet<\/span> Sauvignon, and Muscat Noir.<\/span><span id=\"p153\"> Clairette is one of the white grape varieties used in our wines, even if it is not the main one.<\/span><span id=\"p14\">\u00a0It also includes Grenache blanc, Bourboulenc, l'<span id=\"53\" class=\"s-rg-t\">Ugni<\/span> and a small portion of Muscat Blanc.<\/span><span id=\"p154\">\u00a0Harvesting is often\u00a0<span id=\"155\" class=\"s-ve-t\">made<\/span>\u00a0around the beginning of October, by hand, with careful sorting of the grapes.<\/span><\/p>\n<p><span id=\"p156\">Jean Rougier represents the fourth generation of the Rougier family, who have expanded and embellished the vineyard.<\/span><span id=\"p157\">\u00a0He has found his place in this vineyard and has made his mark.<\/span><span id=\"p158\">\u00a0As each vintage unfolds, so does its signature.<\/span><span id=\"p159\">\u00a0He applied for the\u00a0<strong>Ch\u00e2teau Simone<\/strong>\u00a0which has been recognized and accepted by the<span id=\"160\" class=\"s-rg-t\">INAO<\/span>\u00a0February 21, 1946.<\/span><span id=\"p165\">\u00a0His son Ren\u00e9 Rougier and grandson Jean-Fran\u00e7ois ensure the continuity of his work.<\/span><span id=\"p166\">\u00a0The \"Palette\" appellation, located in the heart of Provence, represents a vineyard covering some 50 hectares of scree soils derived from the limestone of\u00a0<span id=\"167\" class=\"s-rg-t\">Langesse<\/span>The vineyards are located on the slopes facing the famous mountain, benefiting from a special microclimate.<\/span><span id=\"p170\">\u00a0This appellation mainly concerns white, red and ros\u00e9 wines.\u00a0<span id=\"171\" class=\"s-bl-t\">and ros\u00e9s<\/span>.<\/span><span id=\"p23\">\u00a0This appellation decree was drawn up by the<span id=\"99\" class=\"s-rg-t\">INAO<\/span>\u00a0on April 28, 1946.<\/span><\/p>\n<p>&nbsp;<\/p>\n<h2 style=\"text-align: center;\"><span style=\"font-size: 14pt;\">The great vintages of Chateau Simon :\u00a0<\/span><\/h2>\n<p>&nbsp;<\/p>\n<ul>\n<li>\n<h3><span style=\"font-size: 14pt;\"><strong>Ch\u00e2teau Simone White Wine :<\/strong><strong>\u00a0<\/strong><\/span><\/h3>\n<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6197\" src=\"https:\/\/www.comptoirdesmillesimes.com\/blog\/wp-content\/uploads\/2021\/02\/Chateau-simone-blanc.png\" alt=\"\" width=\"400\" height=\"132\" \/><\/p>\n<p><span id=\"p580\">The vineyards extend over north-facing slopes and hillsides. Soils of limestone scree with an average age of over 50 years.<\/span><span id=\"p581\">\u00a0Some plots are over 100 years old.<\/span><span id=\"p585\">\u00a0Traditional cultivation is carried out without weedkillers.<\/span><span id=\"p398\">\u00a0Grape varieties: 80 % of Clairettes, 10 % of Grenache blanc, 5 % of<span id=\"441\" class=\"s-rg-t\">Ugni<\/span>\u00a0Blanc, 3 % Bouboulenc, and 2 % Muscat Blanc.<\/span><span id=\"p586\">\u00a0The grapes are harvested exclusively by hand, when fully ripe and sorted.<\/span><span id=\"p591\">\u00a0Vinification involves light crushing, pressing and draining on vertical hydraulic presses, and light settling.<\/span><span id=\"p590\">\u00a0Fermentation is carried out with indigenous yeasts in small casks.<\/span><span id=\"p402\">\u00a0The wine is kept in small oak casks for 8 months and then aged in oak barrels.\u00a0<span id=\"474\">l'<\/span><span id=\"471-474\">breeding<\/span><span id=\"474\">\u00a0at<\/span>\u00a0barrels for a\u00a0<span id=\"472\">an<\/span>.\u00a0<\/span><span id=\"p604\">Bottling is carried out with filtration on the plates.<\/span><span id=\"p637\"> The color is \"golden yellow\" with green highlights.<\/span><span id=\"p605\">\u00a0On the nose, it smells of lime blossom, acacia, grape leaves, honey and vanilla.<\/span><span id=\"p638\">\u00a0The palate is fleshy, full-bodied, round and seductively well-balanced.<\/span><span id=\"p633\">\u00a0The flowery, lightly toasted notes are also present.<\/span><span id=\"p608\"> Good persistence with a pleasant, fresh finish.<\/span><\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>\n<h3><span style=\"font-size: 14pt;\">Ch\u00e2teau Simone Red Wine :\u00a0<\/span><\/h3>\n<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6198\" src=\"https:\/\/www.comptoirdesmillesimes.com\/blog\/wp-content\/uploads\/2021\/02\/Chateau-simone-rouge.png\" alt=\"\" width=\"400\" height=\"143\" \/><\/p>\n<p>&nbsp;<\/p>\n<p><span id=\"p411\">The blend is composed of 45 % of Grenache, 30 % of Mourv\u00e8dre, 5 % of <span id=\"488\" class=\"s-rg-t\">Cinsault<\/span> and 20 % of secondary varieties, including in particular :<\/span><span id=\"p412\"> Syrah, Castets, Manosquin (T\u00e9oulier) and <span id=\"496\" class=\"s-rg-t\">Carignan<\/span> and Muscat.<\/span><span id=\"p611\"> The grapes are harvested exclusively by hand, when fully ripe, and then sorted.<\/span><span id=\"p612\">\u00a0Vinification involves light crushing, de-stemming, vatting in small vats, pumping over and maceration for around 21 days.<\/span><span id=\"p613\">\u00a0The pomace is also pressed in vertical hydraulic presses.<\/span><span id=\"p615\"> The wine is kept exclusively in wood, initially in small casks. <span id=\"p614\">(20\/30 hectolitres)<\/span>.<\/span><span id=\"p417\">\u00a0The wine is aged for 2 years, followed by a year in oak barrels.\u00a0<span id=\"527\" class=\"s-or-t\">oak<\/span> of different ages, blended at bottling, which is carried out without filtration.<\/span><span id=\"p418\"> The color is ruby red with light effects.<\/span><span id=\"p419\"> On the nose, we smell prunes, resin, cinnamon, truffles, spices and wood.<\/span><span id=\"p616\"> The palate is supple on the attack and harmonious. It reveals roundness and, with time, a very elegant side.<\/span><span id=\"p622\"> With silky tannins, this is a wine that represents the balance of this beautiful region. <strong>Provence estate<\/strong>.<\/span><\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>\n<h3><span style=\"font-size: 14pt;\">Ch\u00e2teau Simone Ros\u00e9 Wine :\u00a0<\/span><\/h3>\n<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6199\" src=\"https:\/\/www.comptoirdesmillesimes.com\/blog\/wp-content\/uploads\/2021\/02\/Chateau-Simone-rose.png\" alt=\"\" width=\"400\" height=\"157\" \/><\/p>\n<p><span id=\"p623\">The vineyards are planted on north-facing slopes with limestone scree soils.<\/span><span id=\"p624\">\u00a0The average age is over 50, with traditional cultivation and weedkiller-free tillage.<\/span><span id=\"p424\">\u00a0The grape varieties used are 45 % of Grenache, 30 % of\u00a0<span id=\"550\" class=\"s-rg-t\">Mourv\u00e8dre<\/span>\u00a0and 5 % Cinsaut.<\/span><span id=\"p425\">\u00a0Secondary grape varieties also include 20 % of Syrah, Castet and Manosquin,\u00a0<span id=\"555\" class=\"s-rg-t\">Carignan<\/span>\u00a0and Muscat.<\/span><span id=\"p627\">\u00a0The grapes are harvested exclusively by hand at the peak of ripeness, with sorting in the vineyard and in the orchard.\u00a0<span id=\"629\" class=\"s-ve-t\">\u00e0<\/span>\u00a0the cellar.<\/span><span id=\"p625\">\u00a0Vinification involves light crushing, partial destemming, pressing in a vertical hydraulic press and blending with a proportion of bleeding juice.<\/span><span id=\"p428\">\u00a0The wine is kept and aged exclusively in small oak foudres.\u00a0<span id=\"571\" class=\"s-rg-t\">lees<\/span>\u00a0<span id=\"572\" class=\"s-rg-t\">fine<\/span>\u00a0and natural settling by racking.<\/span><span id=\"p626\">\u00a0The wine is a light ruby color with amber highlights.<\/span><span id=\"p641\">\u00a0Nervous on the palate, it is known for its body, finesse and delicate fruitiness.<\/span><\/p>\n<p>We hope you've enjoyed this article, and look out for our other articles on our partner wineries.
