The <strong>a<\/strong> <strong>fame of Ch\u00e2teauneuf du Pape<\/strong> that every connoisseur of fine wine needs to know (and taste!).<\/span><\/p>\n<blockquote><p><a href=\"https:\/\/www.comptoirdesmillesimes.com\/clos-du-caillou\">\u00a0<strong>&gt; Clos du Caillou wines at the best price and in stock<\/strong><\/a><\/p><\/blockquote>\n<p>&nbsp;<\/p>\n<h2 style=\"text-align: center;\">Estate presentation<\/h2>\n<p><span id=\"p69\">This estate is located on sloping rolled pebbles, with sandy soils and plantations that were cultivated in the 1950s.<\/span><span id=\"p82\">\u00a0His age still commands respect.<\/span><span id=\"p71\"> From\u00a0<span id=\"76\">1895<\/span>where the clos was mainly known as a hunting reserve, we <span id=\"75\">found<\/span> local hunters who shared the same passion.<\/span><span id=\"p72\">\u00a0It's thanks to engineer Elie\u00a0<span id=\"80\">Dussand<\/span>Ferdinand de Lesseps' collaborator <span id=\"p68\">(designer of the Suez Canal and pioneer of the Panama Canal)<\/span> who decided to set up the Le Bassin building to provide the town of Courth\u00e9zon with water supplies for several decades.<\/span><span id=\"p83\">\u00a0It consists of a 700-meter-deep borehole.<\/span><span id=\"p84\">\u00a0He was so pleased with the place that he decided to build a cellar.\u00a0<span id=\"85\" class=\"s-rg-t\">underground<\/span>a gallery dug into the safre rock, where the estate's wines are matured at ideal temperatures.<\/span><span id=\"p16\">\u00a0In 1955, Paul\u00a0<span id=\"44\" class=\"s-rg-t\">Pouizin<\/span>\u00a0decided to buy an estate and move in his son Claude, aged just 20.<\/span><span id=\"p17\"> Over the years, Claude and his wife began to work the land, even though they were much criticized in the village at the time.<\/span><span id=\"p86\"> Over time, the vineyard has grown to 9 hectares in the Ch\u00e2teauneuf-du-Pape appellation and 45 hectares in the C\u00f4tes du Rh\u00f4ne appellation.<\/span><span id=\"p91\"> His hard work enabled the vines to produce prestigious cuv\u00e9es 50 years later.<\/span><span id=\"p92\"> He sold his first bottles in 1970. As for Colette, she invests herself in the sale of the tasting cellar to help people discover the local nuggets.<\/span><span id=\"p93\"> In 1980, the first bottles were exported abroad, where they proved a great success.<\/span><span id=\"p22\"> At the age of 61, Claude retired, leaving the estate to one of his daughters Sylvie, the youngest with her husband Jean-Denis.\u00a0<span id=\"63\" class=\"s-rg-t\">Vacheron<\/span>son of Jean-Louis and Marie-Claire\u00a0<span id=\"64\" class=\"s-rg-t\">Vacheron<\/span>winemakers in Sancerre ;<\/span><span id=\"p23\"> the couple set themselves the challenge of moving the land <span id=\"65\" class=\"s-rg-t\">Sancerroises<\/span> to resume the <strong>Clos du Caillou<\/strong> and create great wines.<\/span><span id=\"p24\">\u00a0In 2010, the estate converted to organic farming.<\/span><\/p>\n<p>&nbsp;<\/p>\n<h2 style=\"text-align: center;\">The new era of the estate<\/h2>\n<p><span id=\"p114\">Thanks to the hard work of Sylvie and Bruno, the estate went organic in 2010.<\/span><span id=\"p115\">\u00a0In April 2020, Le Clos du Caillou acquired Domaine Panisse, an exceptional winegrowing estate located just 2 kilometers from Le Clos du Caillou.<\/span><span id=\"p97\">\u00a0<span id=\"107\" class=\"s-ve-t\">Resold<\/span>The estate boasts 6.5 hectares of Ch\u00e2teauneuf-du-Pape on predominantly sandy terroirs.<\/span><span id=\"p116\">\u00a0This vineyard is made up of traditional Ch\u00e2teauneuf-du-Pape grape varieties:<\/span><span id=\"p99\">\u00a0<span id=\"111\" class=\"s-or-t\">Grenache<\/span>Syrah, Mourv\u00e8dre, as well as old Cinsault from 1950 and some Grenache planted in 1924.<\/span><span id=\"p100\">\u00a0They set about converting to organic and biodynamic farming.<\/span><span id=\"p101\">\u00a0The potential of this vineyard is immense.<\/span><\/p>\n<p>&nbsp;<\/p>\n<h2 style=\"text-align: center;\">Estate class=\"s-rg-t\">Mourv\u00e8dre<\/span>\u00a0and 15 % of Syrah.<\/span><span id=\"p121\"> The soils are made up of sand and saffron, which come from plots of land in the \"terroirs des \".\u00a0<span id=\"139\" class=\"s-rg-t\">Cassanets<\/span>\u00a0\"and\u00a0<span id=\"140\" class=\"s-rg-t\">Bedines<\/span>\u00a0\".<\/span><span id=\"p122\">\u00a0Harvesting is done by hand, with sorting in the vineyard.\u00a0<span id=\"141\" class=\"s-ve-t\">a<\/span>\u00a0the cellar.<\/span><span id=\"p123\">\u00a0L'<span id=\"142\">destemming<\/span> is carried out at 100 %, followed by fermentation in concrete vats with indigenous yeasts.<\/span><span id=\"p124\">\u00a0Visit\u00a0<span id=\"143\" class=\"s-rg-t\">pigeage<\/span>\u00a0and d\u00e9lestage are carried out throughout the 29-day maceration of the grapes.<\/span><span id=\"p125\">\u00a0Aged for 14 months in tuns.<\/span><span id=\"p154\"> The wine takes on a \"red\" color\u00a0<span id=\"155\" class=\"s-bl-t\">garnet\" composed of sand and saffron\u00a0<span id=\"p202\">(compacted sand)<\/span>\u00a0on the locality\u00a0<span id=\"204\" class=\"s-rg-t\">\u00a0\"The<\/span>\u00a0<span id=\"205\" class=\"s-rg-t\">Bedines \"<\/span>\u00a0giving the wine finesse and suppleness.<\/span><span id=\"p166\"> The grapes are harvested by hand and sorted in the vineyard.<span id=\"178\" class=\"s-rg-t\">destemming<\/span> is done at 100 %. concrete co-fermentation by indigenous yeasts.<\/span><span id=\"p206\">\u00a0Pumping-over and delestage are carried out throughout the grape Clairette.<\/span><span id=\"p218\">\u00a0The average age of the vines is 40 years.<\/span><span id=\"p258\">\u00a0Aged in barrels for 4 months.<\/span><span id=\"p259\"> Golden in color, with daffodil highlights, the wine is bright and limpid.<\/span><span id=\"p221\"> The aromas are discreet and elegant: white fruits, old-fashioned apples and pears, peaches, roses, caramelized and spicy notes of cumin, black nigella, licorice stick and candied pineapple characterized by the <span id=\"241\" class=\"s-rg-t\">Roussannes<\/span>.<\/span><span id=\"p222\"> The palate is as broad as it is long, with notes of honey and elderflower, <span id=\"252\" class=\"s-ve-t\">jellies<\/span> pineapple, but also scents of lavender and chestnut.<\/span><span id=\"p223\">\u00a0The finish is
