Chassagne-Montrachet wines can be either Chardonnay-based whites or Pinot Noir-based reds. But it's true that whites make up the lion's share of this appellation, with 70 % of the planted area.

TASTING A CHASSAGNE MONTRACHET WHITE<\/span><\/h2>\n


\nWhen you taste a <\/span><\/span>Chassagne-Montrachet white,<\/span><\/span> you're tasting one of Burgundy's finest wines. Its Chardonnay has a golden color with light reflections. The aromas are delicate, complex and offer nuances of acacia and honeysuckle, which combine with fatness and buttery notes due to the presence of marl and limestone. Chassagne-Montrachet can be enjoyed young, with aromas of white and fresh fruit, but wait a few years and you'll discover a highly evolved nose with notes of mushroom and undergrowth.
\n<\/span><\/span>Food and wine pairing <\/span><\/span>are numerous. In the local appellations, go for richly flavored dishes. Spicy Asian cuisine, raw fish or fish cooked in a wok will sublimate this nectar. If you're tasting a Chassagne-Montrachet Premier Cru or Grand Cru, a little more delicacy is called for. Visit Chassagne-Montrachet red wines<\/strong><\/span> are very interesting to taste. Even if they hide behind the reputation of white wines, they offer a rich palette of aromas. To enjoy them properly, however, you'll need to be patient. Like their big sister, the red wines of Chassagne-Montrachet benefit from a magnificent terroir of marl, sand and limestone. This rich terroir produces pinot noir wines that are rather austere when young, and will need to wait a few years. As the years go by, you'll discover bright red wines with a few highlights. In terms of aroma, cherries, morello cherries, forest fruits and red berries are the order of the day. On fine terroirs, slightly animal notes and spicy aromas may complete the aromatic bouquet. On the palate, once the tannins have been rounded off, maturity offers a rich, opulent yet silky structure.
\nThe red wines of Chassagne-Montrachet are not to be taken lightly, so forget the classic pinot noir and fish pairing. The wine would take over very quickly. <\/span>Perfect matches<\/span> Chassagne-Montrachet wines are ideal with meat or game birds. A spice or pepper sauce, or simply a red wine sauce, will soften the character of Pinot Noir.
