Château Simone: Presentation of the estate and its wines

Today we'd like to introduce you to one of our partner domains: the Château Simone. The château is located 4 km from Aix-en-Provence on the hill of Meyreuil former bastide of the Grand Carmelites of Aix.

Château Simone has been owned by the Rougier family since 1830. Thanks to the success of these wines, it is now part of the Provencal territory as the jewel of the appellation.  "AOC Palette  " which covers an area of 50 hectares. The chateau is spread over an area of 20 hectares on the northern slopes of wooded hills of the Montaignet between 150 and 200 m altitude. The château is dominated by pine forests, the rocky mass of Mont St Victoire and the river Arc, all of which create a microclimate. The exposure of the hillsides, the geological structure of thescree limestone and the microclimate are obvious elements that make it part of a high-class cru. 

History of the Château :

The tradition has been carried on for a long time now, where vine-growing remains faithful to practices that do not involve the use of chemicals or other ecologically unfriendly products. Some varieties have survived to the present day. The red and rosé wines come from 80 % of Grenache grapes, Mourvèdre and Cinsault. Some contain other grape varieties in which Syrah dominates, le Manosquetthe Castetthe Carignan, Cabernet Sauvignon, and Muscat Noir. Clairette is one of the white grape varieties used in our wines, even if it is not the main one. It also includes Grenache blanc, Bourboulenc, l'Ugni and a small portion of Muscat Blanc. Harvesting is often made around the beginning of October, by hand, with careful sorting of the grapes.

Jean Rougier represents the fourth generation of the Rougier family, who have expanded and embellished the vineyard. He has found his place in this vineyard and has made his mark. As each vintage unfolds, so does its signature. He applied for the Château Simone which has been recognized and accepted by theINAO February 21, 1946. His son René Rougier and grandson Jean-François ensure the continuity of his work. The "Palette" appellation, located in the heart of Provence, represents a vineyard covering some 50 hectares of scree soils derived from the limestone of LangesseThe vineyards are located on the slopes facing the famous mountain, benefiting from a special microclimate. This appellation mainly concerns white, red and rosé wines. and rosés. This appellation decree was drawn up by theINAO on April 28, 1946.

 

The great vintages of Chateau Simon : 

 

  • Château Simone White Wine : 

The vineyards extend over north-facing slopes and hillsides. Soils of limestone scree with an average age of over 50 years. Some plots are over 100 years old. Traditional cultivation is carried out without weedkillers. Grape varieties: 80 % of Clairettes, 10 % of Grenache blanc, 5 % ofUgni Blanc, 3 % Bouboulenc, and 2 % Muscat Blanc. The grapes are harvested exclusively by hand, when fully ripe and sorted. Vinification involves light crushing, pressing and draining on vertical hydraulic presses, and light settling. Fermentation is carried out with indigenous yeasts in small casks. The wine is kept in small oak casks for 8 months and then aged in oak barrels. l'breeding at barrels for a anBottling is carried out with filtration on the plates. The color is "golden yellow" with green highlights. On the nose, it smells of lime blossom, acacia, grape leaves, honey and vanilla. The palate is fleshy, full-bodied, round and seductively well-balanced. The flowery, lightly toasted notes are also present. Good persistence with a pleasant, fresh finish.

 

  • Château Simone Red Wine : 

 

The blend is composed of 45 % of Grenache, 30 % of Mourvèdre, 5 % of Cinsault and 20 % of secondary varieties, including in particular : Syrah, Castets, Manosquin (Téoulier) and Carignan and Muscat. The grapes are harvested exclusively by hand, when fully ripe, and then sorted. Vinification involves light crushing, de-stemming, vatting in small vats, pumping over and maceration for around 21 days. The pomace is also pressed in vertical hydraulic presses. The wine is kept exclusively in wood, initially in small casks. (20/30 hectolitres). The wine is aged for 2 years, followed by a year in oak barrels. oak of different ages, blended at bottling, which is carried out without filtration. The color is ruby red with light effects. On the nose, we smell prunes, resin, cinnamon, truffles, spices and wood. The palate is supple on the attack and harmonious. It reveals roundness and, with time, a very elegant side. With silky tannins, this is a wine that represents the balance of this beautiful region. Provence estate.

 

  • Château Simone Rosé Wine : 

The vineyards are planted on north-facing slopes with limestone scree soils. The average age is over 50, with traditional cultivation and weedkiller-free tillage. The grape varieties used are 45 % of Grenache, 30 % of Mourvèdre and 5 % Cinsaut. Secondary grape varieties also include 20 % of Syrah, Castet and Manosquin, Carignan and Muscat. The grapes are harvested exclusively by hand at the peak of ripeness, with sorting in the vineyard and in the orchard. à the cellar. Vinification involves light crushing, partial destemming, pressing in a vertical hydraulic press and blending with a proportion of bleeding juice. The wine is kept and aged exclusively in small oak foudres. lees fine and natural settling by racking. The wine is a light ruby color with amber highlights. Nervous on the palate, it is known for its body, finesse and delicate fruitiness.
