Jacky Blot has helped Montlouis sur Loire from the shadow of Vouvray and give it a reputation of its own. Jacky Blot revolutionized the viticultural techniques of the time in this appellation: organic viticulture, manual harvesting, wild yeasts, barrel fermentations and no malolactic* conversions (conversion, in a wine, of malic acid into lactic acid).

They are dry, less fruity than complex and austere. He believes that sugar confuses the chenin to transparently reveal its best qualities. That's why his winemaking is almost fanatically Burgundian, although he prefers to describe it as "the Montlouis school". He ferments all his whites in barrel. And instead of a rapid, cold fermentation designed to bring out the aromas, he borrows from the elite Burgundy cadres of winemakers like Jean-François Coche (of Coche-Dury) and Jean-Marc Roulot (of Domaine Roulot): he exposes the grape must to oxygen. before a long, slow fermentation and leaves the wine in steel vats for months before bottling, which firms up the texture.

"This bottle is bold. The wine offers rich flavors of apricot, glazed pear and quince paste, carried by finely pearled acidity that is well-drowned in the finish, infused with notes of ginger and sandblast. Drink now through 2023.
