Renowned for vinifying his wines as he wishes, Hervé Bizeul creates atypical cuvées with blends that reflect his personality, like "Petite Sibérie", the estate's emblematic cuvée.

La petite Sibérie - Vin de France
As mentioned above, Petite Sibérie is surely the estate's most emblematic cuvée.
The parcel is just over two hectares in size, but only half of it is cultivated with vines. Old Grenache vines are planted on clay-limestone and schist soil. A great deal of work is carried out on the vines to achieve exceptional ripeness and concentration. The wine is blended with a Mourvèdre/Syrah blend ranging from 5 to 7% depending on the vintage. The wine is then aged in new barrels. The wine is powerful and structured. Notes of garrigue dominate aromas of black fruits and spices. It's essential to wait 10 years before opening a bottle of Petite Sibérie. For the more patient, 20-30 years will bring out nuances of cold tobacco and herbaceous notes.
A great dish is needed to accompany this magnificent wine:
- Red meat: ribeye, rib steak, flank steak, etc.
- Nice meat pairing also with Côtes à l'os, matured meat
- Or even a wild boar.
Modeste - Côtes Catalanes
This cuvée is made for lovers of glouglou wines. It's a blend of Grenache, Syrah, Cinsault and Mourvèdre. Its terroir allows for slightly higher yields, resulting in a supple, rounded wine. Notes of fresh fruit and Morello cherries suggest a wine for sharing:

Les Sorcières du Clos des Fées - Côtes du Roussillon
This cuvée is a blend of 50% Syrah, 30% Grenache and 20% Carignan.
The Syrah is rather young, while the Grenache and Carignan come from a selection of old vines between 40 and 80 years old. Vat-ageing and controlled concentration ensure rapid drinkability. The wine is supple and full-bodied, with notes of black fruit. The ideal wine for :
- start an aperitif
- Charcuterie platter
- antipasti
Clos des Fées, Grenache blanc vieilles vignes - Côtes Catalanes
Attention, super vintage! Not that the others aren't good, but this one has a little something extra. It's a blend of 90% Grenache blanc and 10% Grenache gris, all over 100 years old. Like the other white cuvée, the grapes are harvested in the morning, by refrigerated truck. Pressing is slow. The wine is then aged in barrel on lees for 5 to 8 months. The wine is rich and powerful, with notes of juicy fruit, apricot with a possible impression of sweetness, even when dry. A wide range of pairings are possible:
- With beautiful river fish
- or Mediterranean fish.
- If you prefer to enjoy the wine with a cold dish, noble shellfish, lobster or prawns are a perfect match.
Les Sorcières du Clos des Fées - Côtes du Roussillon
This time in white, Hervé Bizeul decided to blend young Vermentino and Roussanne vines. From the early morning harvest, to the light, direct pressing, right through to bottling. Everything is done to create a light, thirst-quenching wine. Notes of exotic fruit and a fresh finish are the perfect aromas to accompany :
- a seasonal salad
- a mozzarella tomato
- Burrata
