Although for some the word "Beaujolais" reflects only the wines of Beaujolais Nouveau, this wine region in its own right is made up of no less than 12 appellationsincluding 10 Crus quite distinct from one another. The grape varieties are rather simple, as there are only two that can be included in the appellation. For white wines, these are chardonnay. For red wines, they are composed of gamay.

When should you serve a Beaujolais?
First of all, it's important to distinguish between a wine from the Beaujolais appellation, whose grapes are grown on the plains, and a wine from a Beaujolais cru, which benefits from a more qualitative soil and exposure. Red Beaujolais "simple" remain supple, light and easy-drinking wines. We therefore recommend them at the beginning of a meal with aperitifwith delicatessen or to accompany white-fleshed poultry. White Beaujolais composed exclusively of Chardonnay, offer, depending on the terroir, fleshy whites with white fruit aromas. They go very well with cheeses as well as poultry.
When should you serve a Saint-Amour?
Saint-Amour is undoubtedly one of the most delicate and gentle appellations to be found on granite soils. It's an appellation with two faces, offering both light, gourmet wines and powerful, dense ones. With Saint-Amour, it is preferable to go for slightly simmered meats or butcher's parts not too strong. Roast beef will go very well with a red wine sauce.
For Saint-Amour wines that are a little softer and rounder, it is possible to combine them with fish because their raspberry and fresh fruit notes won't take over.
How to serve a Juliénas wine?
The Juliénas appellation is undoubtedly one of the most diverse in Beaujolais. This enables it to offer balanced, complex wines. Unlike Saint-Amour wines, fish should be avoided, but you'll find it easy to go for fish dishes. roast chickens or red meats not too strong.
When should you drink a Moulin-à-Vent wine?
The wines of Moulin-à-Vent are among the Beaujolais wines that age best. Some parcels, such as Clos Saint-Jacques, can last more than a decade.
When young, the wines are powerful, some of them tannic. After a few years, the palate softens and becomes rounder, revealing licorice notes of black fruit and spices. It's at this point that Moulin-à-Vent can sublimate meat dishes such as duck with pepper. If you manage to be patient for a few more years to obtain notes of evolution and mushrooms, your wine will then sublimate a rabbit with prunes or trumpets of death.
When should you serve a Morgon?
The Morgon appellation is the largest in the Beaujolais region. With its 250 winegrowers, it enjoys an international reputation. The wines are powerful and structured when young, but after a few years, they turn to aromas of stone fruits, morello cherries or kirsch. Not far from the aromas of Burgundy's fine Pinot Noir.
