Sauternes - Château Suduiraut - 1er Grand Cru Classé de Sauternes
Located in the commune of Preignac, not far from Château Yquem, Château Suduiraut was a family estate from 1580 to 1992. It is now owned by the Axa Millésimes group, which has 92 hectares of vines to vinify one of Sauternes' finest nectars. The 2009 vintage is an incredible vintage for Bordeaux, and not just for reds. On Sauternes, botrytis developed rapidly, resulting in a high concentration of sugar in the grapes. The challenge for the estate was to harvest at the right time to maintain this balance between sugar and acidity. The result is one of the greatest vintages ever produced. Rich and honeyed, with notes of apricot and spices, without being too heavy on the palate. A real delight... For a classic, you can serve it with foie gras toast as an aperitif. Personally, I'd recommend pairing it with a characterful cheese such as Bleu d'Auvergne, or for the adventurous, salt-crusted Tuna Tataki.

Cuvée des Loups Montlouis - Domaine de la Taille aux Loups - Jacky Blot
This time in the Loire, in the Indre-et-Loire department. Jacky Blot, an emblematic figure in the appellation, took over the domaine in the 90s, after having cut his teeth with Nicolas Joly, another important figure in the wine world, who vinifies in the Coulée de Serrant AOC.
The Cuvée des Loups is a cuvée that honors the estate. It is quite rare, as Jacky Blot only vinifies it in very good years. The winemaker looks for botrytis to recover grapes bursting with sugar. On a clay-silica terroir, the Chenin grape expresses its aromas of quince and candied fruit.
The pairings are quite similar to those of a Sauternes, although Chenin also appreciates spices.

Riesling Grand Cru Schlossberg - Domaine Trimbach
As you'll have gathered, for this first fine bottle of white, we're off to Alsace, to a world-famous estate: Domaine Trimbach.
Today, run by Hubert Trimbach, his nephews Pierre and Jean and his daughter Anne, no fewer than twelve generations have succeeded one another since 1626, making the estate one of the guarantees of Alsace's terroir and know-how.
This Grand Cru Schlossberg is one of the latest acquisitions by the estate, which is the proud owner of 2 hectares of south-facing, granite terroir.
On tasting, this Riesling reveals a dry, delicate wine with floral and fruity aromas. After a few more years, the wine will evolve towards spices and develop all its complexity and minerality. You can pair this fine bottle with "Fines de Claire Verte" oysters, which, matured in clay basins, will develop their iodine and terroir aromas.

Puligny-Montrachet 1er cru Les Combettes - Domaine Leflaive
Careful, because here we're tackling a very, very great domaine. We have a trilogy that brings together a great vintage in Burgundy, a mythical terroir and, above all, the touch of a winemaker who, as early as the 1990s, decided to gradually work her vines biodynamically. Anne Claude Leflaive passed away in 2015, and it's now Olivier Leflaive who continues the work begun a few years ago. The 73-are parcel is located in the south of the appellation, on the edge of the Meursault appellation.
Very complex and mineral, with notes of white truffles and flowers, and always with remarkable balance and substance on the palate.
