Spring rolls are a traditional Vietnamese culinary specialty. It is based on a thin raw rice cake, into which ingredients are placed and then rolled. The dish is generally eaten as an aperitif or starter. Some regions use white fish accompanied by mint leaves. To accompany the rolls, we recommend fresh, fruity white wines with a long finish. However, if you prefer a red wine, you'll need a supple, spicy, red-fruit wine.

HOW BEST TO ACCOMPANY A SPRING ROLL WITH WINE

There are 3 Vietnamese varieties of spring rolls. Here are the wine pairings for the 3 different types of spring rolls:

 

  • Pairing 1: Spring roll with minced pork, pork rind and cucumbers

This first roll is quite tasty, with the pork rind adding fat and character. We recommend a white wine from the South of France. We're thinking of :

  1. Château Simone white composed of 80% clairette, 10% grenache blanc and completed by bourboulenc, ugni blanc and muscat blanc. The fruity clairette brings freshness and aromas of white fruit and citrus. Grenache blanc brings a hint of round texture and dried fruit.
  2. For red wine, a Côtes-du-rhône will be perfect. We're thinking of Château de Saint Cosme with its cuvée The two Albions. Its sweetness, dark fruits and suppleness won't take over, but will enhance the taste of the pork.

 

  • Chord 2: Spring roll with minced beef and vegetables

The beef roll is richer in flavor, often spicy and accompanied by Mediterranean vegetables. To accompany it, you'll need a white wine with more character: 

  1. Visit Château de Vaudieu will be perfect. Present in the appellation Châteauneuf du PapeThe main grape variety is white Grenache. Fatter, more opulent and with good acidity, it will counterbalance the spiciness of the beef.
  2. For red wine the Mas Gabinèle estate will surprise you. Its powerful nose gives off aromas of red fruits. On the palate, notes of violet and blackberry complement a mineral touch.  

 

  • Pairing 3: Pork spring rolls cooked in broth, shrimp and omelette

Harmony with this third variety will be quite similar to the second.

  1. For white wine, you need to choose a full-bodied wine with white fruit aromas. The South of France is a breeding ground for this type of wine. Here are a few southern estates offering the perfect white wine for this pairing: La Pèira in white DamaisèlaIglesia Vella Côtes Catalanes White - Roc des Anges,  Clos Canarelli Figari White
  2. For red wines, on the other hand, you need to pay attention to their structure. They can have character and spice, but they shouldn't be aged too long in new barrels. This would overpower the food.
