First of all, here is a presentation of the appellation PauillacIt's important to understand the history and type of wine behind this appellation. Here too, Pauillac is located on the left bank of the Gironde. It is considered one of Bordeaux's most prestigious appellations, and is home to 18 crus classés from the 1855 classification, headed by Château Lafite Rothschild, Château Latour as well as Château Mouton Rothschild.
The appellation comprises some 1,250 hectares of vines and produces exclusively red wine, although some of the Grands Crus Classés also produce white wine, which is automatically downgraded to AOC Bordeaux.
The soils of Pauillac are quite diverse, combining gravel and sandy soil with small gravels. The blend is classic, with Cabernet Sauvignon as the preferred grape variety, to which may be added Cabernet Franc, Merlot, Malbec and Petit Verdot.
To enjoy a Pauillac wine, you need to be patient.
The climate, the grape varieties and the work carried out at the château make these wines powerful and full-bodied. Pauillac wines have great ageing potential. They can be forgotten for 15 to 20 years in fine vintages. We're not asking you to be that patient, but to wait a minimum of 6-8 years in order to round out the tannins and allow the aromas to become more expressive. If you taste a Pauillac wine before it's 10 years old, don't hesitate to decant 2h before. The aromatic bouquet will be a blend of primary aromas of red fruits and spices, accompanied by secondary aromas of woodiness. The longer you let your wine age, the softer the tannins will become, and the aromatic palette will transform into notes of mushrooms, cloves and tertiary aromas. The Holy Grail of a great Pauillac wine.
Food and wine pairings with Pauillac wines :
- They are relatively simple, since they all revolve around meat.
- If you enjoy a Pauillac wine when it's young, you'll want to give preference to rare dishes or those in sauce. Matured meats should be tasty, to counterbalance the power of the red wine.
- If you can be patient and enjoy a Pauillac wine over 15 years old, you can go for more cooked dishes and autumnal accompaniments.
- The classic being 7-hour lamb.
