Visit Veal Paupiettes ! A great-great-great-great-grandmother's recipe! Recipes for paupiettes can be found in cookery books dating back to 1742, so this is a traditional French dish that everyone should be familiar with. Apart from the fact that paupiettes could be found in restaurants, they were mainly made to finish off the previous day's leftovers. The principle is quite simple: stuff a thin slice of meat, roll it up and tie it up. It sounds so easy to say, but after a few seconds of struggling with the escaping stuffing, you'll get the hang of it. The accompaniment is varied, but often includes spring vegetables and mushrooms. Located in Chinon, Château de la Grille benefits from a beautiful terroir of tuffeau and limestone sand, which absorbs water in winter and releases it in summer. This means that the vines are never under water stress, and produce lovely Cabernet. Owned by Baudry-Dutour, Château de la Grille is one of Chinon's finest wines. This very fine 2005 vintage will give off notes of ripe red fruit, evolving slightly to give notes of sweet spices. It goes perfectly with veal paupiette, without overpowering it.

Its cuvée Les Obriers is a feast of fruit and sunshine. Aromas of candied fruit and garrigue emerge without exuberance, but with great precision. For all enthusiasts of the great Languedoc-Roussillon estates, we recommend tasting the domaine's cuvées, which are undoubtedly in the same league as all the great southern wines...
