accord-vin-lasagne

Lasagne is one of the typical Italian dishes that the French love to cook. Although the ingredients may vary from one recipe to another, the basic recipe remains the same. It's a montage of several rectangles of pasta into which different ingredients are inserted. Some use bolognese sauce, others béchamel. As for the cheese, some use parmesan, others mozzarella or ricotta. To complete the recipe, meat, usually ground beef, is used. There are also fish-based recipes, which are admittedly rarer, but very good too.

Matching lasagne is relatively simple. Whatever the basis of the recipe (except for fish), the pairing is essentially the same. The first step is to find a "sunny" wine that will evoke the warmth and sometimes spiciness of Italian wines. Next, avoid wines that are too tannic. As this is a pasta-based dish with no bleeding or sauce as such, adding tannin would accentuate the pasty, heavy texture of the preparation.

Rhône wines are perfect!

Wines from the South of France are perfect with lasagne. Syrah lends itself well to spice and pepper, while the terroir adds density to the wines. From Crozes-Hermitageor some Saint-Joseph go very well together. In the southern part of the Rhône, wines such as Côtes-du-Rhône-Villages or even Rasteau will be associated with the dish.

Languedoc wines are also very good!

As you can see, we strongly recommend that you choose wines from the "sun", i.e. from the South. The Languedoc and Roussillon regions abound in lasagne wines. On the Languedocthe "simple" name Languedoc will be very good. It gives off notes of red fruit, sometimes black fruit if the wines are made from Grenache or Carignan. In the Roussillon region, avoid the Roussillon-Villages, which often produce heady wines. Roussillon red which gives candied fruit aromas that are rich and delicious.

Our favorite of the moment, a Vinsobres from Domaine de Saint-Cosme with a blend of Grenache, Syrah and Mourvèdre. Complex, with notes of garrigue, spices and red fruit.
