Welcome to Comptoir des Millésimes. Today, we're going to give you a new food and wine pairing guide who can help you make the best possible match. And so we're going to tell you about duck confit in wine sauce. Confit means gourmet. Duck confit with wine sauce is often richly flavored, gourmet and accompanied by shallots. To accompany this dish, the wine must have both sufficient character to accompany the duck and roundness to go with the confit and wine sauce. As you can see, you don't need a big, tannic red, but rather a warm, rich red wine. If, however, you choose to go for a white wine, it's best to change the sauce and go for a duck à l'orange, for example.

A few wine ideas to accompany duck confit

Châteauneuf-du-Pape 2018 - Domaine de Marcoux

Traces of the estate date back to 1344! Sophie and Catherine succeed their brother, who pioneered biodynamic viticulture in 1991. After several acquisitions, the domaine now owns 16 hectares of vines in Châteauneuf-du-Pape. The classic Châteauneuf du Pape cuvée is a bomb of black fruits and spices. The palate is powerful, with fruit à l'eau de vie and toasted bread. The 2018 vintage can be decanted to accompany duck. And for the more patient, it can be cellared for at least 5 years before tasting.

Syrah Léone 2005 - Domaine Peyre Rose

A well-known domain, but one you absolutely must follow! In 1990, Marlène Soria founded Domaine Peyre Rose in the hills above Saint-Pargoire, with the ambition of producing powerful, concentrated terroir wines using organic farming methods. The Syrah Léone cuvée perfectly expresses notes of garrigue, black fruit and pepper. This 2005 now draws on cold tobacco, leather notes and a fresh finish. A real discovery to be enjoyed with eyes closed.

How about duck confit with orange sauce? 

Some people will recommend a sweet wine to bring out the orange flavour, but personally, I prefer a dry, aromatic white that's fresh on the palate. Duck with orange has a slight sweetness, but a tangy finish. That's why a dry white goes perfectly with it, without being too heavy.

Les Jardins de Babylone 2014 Jurançon dry - Didier Dagueneau

A small 3-hectare estate in the south-west of France, Les Jardins de Babylone is owned by the Dagueneau family. In the same vein as his Pouilly wines, Louis Benjamin Dagueneau offers a pure, gourmet dry Jurançon with candied white fruit aromas. It's the perfect accompaniment to duck's tangy, lemony finish.
