Pairing food and wine is a relatively "easy" exercise with Louis Latour, given its wide range of appellations. Present throughout Burgundy, the house owns no less than 48 hectares of Grand Cru vineyards. Having its own cooperage will help the domaine to produce higher-quality wines, thanks to near-perfect management of stave toasting and, consequently, controlled aging of the wines at 100%.

  

The domaine therefore produces wines in a wide variety of styles, while retaining the identity of the house.

1. Meursault 1er Cru - Château de Blagny - Louis Latour

We're off to a great start, you may say, but you'll have to do the test to believe it. After all these years, the Château de Blagny Meursault 1er Cru (2007) gives off notes of evolution, mushrooms and... truffles! Perfect to accompany foie gras, which because of its texture, will go with the wine in the same direction. A real treat...

 

2. Corton Grancey Grand Cru - Louis Latour

The perfect match for meat lovers. We chose this Corton Grancey in honor of the last family to own the Château, where part of the winery is now located. The Grand Cru spends around 10 to 12 months in barrel, with only 35% in new barrels, to give it structure but fine tannins. Its aromas of blackcurrant, black fruit and licorice are matched by the power of grilled beef, reminiscent of roasting. 

3. Puligny-Montrachet 1er Cru - Louis Latour

Cheese - Époisses

  

With an old vintage, we're going to seek out all its tertiary, terroir aromas in this Puligny-Montrachet premier cru. Notes of undergrowth, humus and mushrooms. The fatty texture won't ruffle this Marc-de-Bourgogne-aged cheese, against which you need character to stand up.

 

4. Gevrey Chambertin - Louis Latour

Dessert - Black Forest

 

There's nothing Burgundian about this dessert, but the ingredients present in a black forest are terribly reminiscent of the aromas of Burgundy red wines. Going for an old vintage will result in an evolved wine, with slightly "kirsch" notes of morello cherry and black fruit.

 

We could have made so many different pairings with all the appellations that Louis Latour owns. Beaujolais as an aperitif or with poultry, Chablis whites for white fish or powerful reds for game.
