How to match your couscous with the perfect wine?
The couscous is a very tasty dish that gives off an enormous amount of aroma due to the spices present. The wine selected should be able to cope with the power of the dish, but should also be careful not to overpower it with tannins.
Two colors are available to accompany couscous. For rosé lovers, it can be paired with Tavelrosé from the southern Rhône Valley. This rosé is a wine of character, in an appellation that produces only this color. It reveals notes of red berries and forest fruits, as well as hints of spices. It's a rosé of character that will stand up to the power of a couscous. The Bandol rosé are also formidable table companions. Even more opulent and powerful, they add depth and length on the palate.
For red wines, there's a guideline to follow. You need to choose a wine that is powerful, rich in flavor and relatively supple. From there, you have a choice of many appellations. In the Rhône, the Côtes-du-Rhône and their flexibility will be great. The Crozes Hermitage and their spices too. A little further south of the Rhône, some Rasteau or Vinsobres with their notes of black fruit and sweet spices will be perfect. Even further south, wines from the Languedoc region are ideal for food pairing. From Faugères to aromas of candied fruits, through to wines of la Clape softer but just as rich in flavour.
