Which wines to serve with blanquette de veau?

Visit Veal Blanquette is a traditional French dish based on veal marinated and simmered in a white wine broth, carrots, leeks, onions and mushrooms, with a cream and butter sauce. Suffice to say that this is a hearty, richly flavored and delicious dish. In this case, a white or red wine can be paired, but always with a gentle accompaniment. It is therefore preferable to choose a dry, full-bodied white wine rather than one that is too lively. Just as it's better to choose a light, fruity red wine rather than one that's too young and still too tannic. Here are a few examples of the great wines available on the site to accompany a blanquette de veau:

Dominique Laurent is an integral part of the wine world. Formerly a pastry chef by trade, in the 80s he decided to change professions and became a négociant, specializing in Burgundy wines. His job is to select the best terroirs and the best wines, and then to bring all his knowledge to bear on their maturation. This is an important step for the great wines of Burgundy, and he has made it his trademark, aiming to bring a backbone to the wine without ever altering it. This is the case with this Volnay 1er Cru which, thanks to its ageing, has developed notes of mushroom and undergrowth, while retaining sufficient structure to accompany dishes with sauce.

This is one of Burgundy's must-haves. A family affair, as Marc Colin's children are now at the head of the domaine. Always striving for perfection, their wines are of impeccable precision.

The Saint Aubin appellation is a little more confidential. It lies to the north of Chassagne, and its neighbor is AOC Puligny Montrachet. The Premier Cru Montceau benefits from some of Saint Aubin's finest terroirs, giving it a very interesting tension, substance and power for a white wine. When young, it gives off aromas of white fruit and white flowers, but wait a few years and you'll get notes of white truffles and gunflint. A wonderful discovery!

Jean-François Ganevat is an emblematic figure in the Jura vineyards, renowned for the quality of his organic and biodynamic work. Having cut his teeth in Burgundy, he decided to settle in the Jura to work with different grape varieties while keeping the same winemaking method. Light, gentle work to preserve the identity of his micro-parcels and grapes.

With the cuvée MadelonAnne & Jean-François Ganevat offer us a blend of Trousseau and Gamay grapes. There's very little manipulation on this cuvée, which has no added sulfite, no indigenous yeast, and is neither fined nor filtered... Real grape juice, greedy, with hints of wild berries and raspberry. Its aromatic complexity will accompany the blanquette without ever overpowering it.
