The Aperitif

To kick off hostilities, an aperitif is in order. Visit crêpes roulées with raw salmon will be perfect. As we begin our meal with this dish, a dry, fresh white wine is ideal. Citrus fruits and freshness adore raw fish. They give it a pep boost and enhance the iodine notes.


Main course

Afterwards, we continue the meal with savoury crepes. The classic recipe is ham, cheese and an egg. But that's just for pancakes at home, because after all, there are so many different recipes. Whatever the case, the pairing will often remain the same, with a few nuances. Just be careful not to choose a wine that's too tannic or too powerful. The texture of crêpes is a bit "pasty", so you don't want to add too much with the wine. So opt for a supple, silky wine and, depending on your recipe, choose a suitable wine.


Dessert crepes for gourmets

For those with a sweet tooth, dessert is a must. Here again, there are many recipes, but sugar and/or acidity will often be present. Here again, we can make a generalization about pairing trends. Sweet wines are often needed to accompany dessert, but care must be taken to ensure that the sugar doesn't take over. The best-known dessert crepe is the crêpe Suzette. Made with Grand Marnier and orange zest, it's both delicious and fresh. There are two possibilities.

  • You can either choose a strong sweet wine that will balance the tension of the orange, such as Sauternes
  • Or you can choose to go a little softer and take a Côtes de Gascogne for example, to accompany the orange finish.
