PAIRING WINES WITH OTHER RISOTTO RECIPES

A traditional Italian dish, Risotto can be cooked in a variety of ways. The principle is quite simple: first, brown the rice in a fatty substance (butter or oil, for example). Once the fat has been absorbed by the rice, it's time to cook it in the broth. You'll need to choose your broth carefully, depending on the recipe and the ingredients you're going to use with your rice. You can use a vegetable, mushroom, meat or fish stock.
When it comes to food and wine pairing, risotto is a slightly "pasty", heavy dish. It should therefore be accompanied by a fresh, supple, low-tannin wine.

 

  • WHAT WINE FOR SCALLOP RISOTTO?

As you can imagine, this time the risotto will be based on a fish stock and will be accompanied by scallops sprinkled with parmesan. The scallop is a delicate, fine fish. We therefore recommend serving a fine white wine so as not to overpower the scallops:

We chose this magnificent bottle because its geographical location and vintage make it the perfect accompaniment to our dish. There are 7 climats classified as Grands Crus in the Chablis appellation, and each of them produces mineral, complex whites.
Thanks to the 2009 vintage, the nose will be slightly evolved, with notes of mushroom and truffles.
The palate is soft and round, with hints of spring.
The finish is fresh and oily, with a hint of lemon, perfect for enhancing the iodine of scallops.

 

  • WHICH WINE GOES WITH MOREL RISOTTO?

This time we won't be using a stock from the same family as the main ingredient. It's best to prepare it with a vegetable broth to avoid an overly pronounced mushroom taste. To accompany morels, you'll need a rich wine with old-wine aromas. Once again, a Burgundy wine will be ideal to accompany it. :

? Volnay 1er Cru 2005 Les Pitures - Michel & Marc Rossignol

We chose this Volnay 1er Cru, as the appellation is one of the most delicate in the Côtes de Beaune, and its old vintage will be ideal to accompany the risotto.
Produced at 100% with Pinot Noi grapes, this wine gives off aromas of undergrowth, mushroom and red fruit. The wine will have enough power to balance with the morels without taking over or being overpowered.

What you need to know about risotto and wine

Risotto is a dish that originated in Italy, but has been revived and sublimated by top French chefs. Wine and risotto is an association with a few rules. Depending on its texture - creamy, very creamy - and its taste, thefood and wine pairing must be different. 3 rices are preferred for a smooth risotto: arborio rice, the easiest to find in stores, is also used for rice pudding; vialone nano rice, with its much smaller grain, as its name suggests, is harder to find, but excellent for a very creamy risotto; carnioli rice, with its long, very porous grain, competes with arborio.

Which white wine for risotto?

Red or white, the choice is yours. Both are possible to best accompany a risotto. The choice is yours! White wines and risotto:

  • L'wine and mushroom risotto (morels, porcini mushrooms...) will gladly accept a sweet or syrupy wineas a Sauternes.
  • Visit turkey risotto or to chicken favors a dry white wine to drink and use as a white for risotto by including it in the recipe. Which red to drink with risotto?

  • A risotto with Parma ham goes very well with an old wine such as an Châteauneuf-du-Pape : Marcoux Estate .   • Visit morel risotto can be paired with great red wines, although many prefer a sweet white wine. In this case, a red Côte de Provence or Côte du Rhône will bring both strength and sweetness to the dish.
