The result is a wine that has "taken to the air" and will be oxidized, with good acidity. It is made from Savagnin grapes, which, combined with yeast, give it nutty notes. It is difficult to drink this wine with a meal because of its high acidity, but it will be interesting to pair it with pressed cooked or uncooked cheeses or, for the adventurous, in small doses with foie gras.  

 

Côte du Jura 2015 - Domaine Macle 

Jean Macle produces his wines in the Burgundian style. He enjoys a similar terroir with limestone soil, which brings structure and minerality to his wines. His Côte du Jura is a blend of Chardonnay with a small amount of Savagnin. Remember this? That grape used to make vin jaune! So you'll find the finesse of Chardonnay with its floral aromas mingling with the nutty notes of Savagnin.

Alsace Grand Cru - Riesling Schlossberg 2019 - Domaine Weinbach 

Bear in mind that you need a rich, powerful wine to counteract the strength of the poultry and yellow wine. A Grand Cru Riesling will do the trick.
