Bourgogne Blanc 2018 Les Clous Aimé - Domaine de Villaine
DESCRIPTION
Les Clous Aimé (formerly known as Les Clous) comes from seven different parcels of chardonnay located in the Bouzeron appellation area. South-facing, where, in summer, the grapes ripen away from the north wind.
Our vines are planted with selections of the Chardonnay grape variety that we have chosen for their moderate yields.
The elders of the village of Bouzeron used to say, when they went to the Chardonnay vineyards in Bouzeron, that they went to "Les Clous Aimé".
What the elders were saying, I wanted to write it on the label of our Burgundy Côte d'Azur. White Chalonnaise to honor them.
Les Clous Aimé is above all a wine to keep. It is made from old vines and a dominant terroir. calcareous, it presents in its youth a very pure and mineral character, but to appreciate it and it is only after 5 to 7 years that it reveals the finesse and the complexity of its aromas.
It should be served between 12 and 14 degrees with fish, white meats (avoiding sauces and gravies) and meat. too spicy) and some cheeses: goat, reblochon, beaufort, comté.
TASTING
Vinified and matured for 12 months in wooden tuns, our "Clous Aimé" 2018 has a Very expressive nose of white flowers, broom and acacia. The mouth is energetic, fresh, proposing a beautiful acidity while roundness and smoothness. A wine whose aromatic palette goes to build up over time.
Drink on the fruit or wait three to five years to feel the wine gain density.
