Like Rauzan-Ségla in Margaux, Canon is bought by the Wertheimer family (owner of the Maison Chanel) and Kolasa runs the estate. He had to completely redo the wine cellar (because it was contaminated) in order to produce wines designed to last. These wines give off an elegant character and a cedar aroma after a few years in bottle.
In 2011, we are witnessing the expansion of the Château Canon thanks to the purchase of the 12.5 hectares of its neighbour (Domaine Matras) located in the extension of the estate on the south/south-west side of the Saint-Emilion Plateau. This extension will be entirely dedicated to the production of the second wine "Croix Canon" (formerly Clos Canon) and has allowed an increase in the proportion of Cabernet Franc vines. The "Croix Canon" 2015 is a surprising success.
The harvest is manual and the reasoned plot management, with a view to respecting the environment and reducing the estate's ecological imprint, allows the grapes to be harvested when they have reached maturity.
Efforts pay off! In its latest vintages, the Château Canon is moving up in the lead and really deserves its two stars. A true model of balance with an exemplary finesse and somewhat spicy. An elegance in the aromas with floral notes that become more and more precise as the vintage progresses.
