Chablis is a French dry white wine d'appellation d'origine contrôlée produced around Chablis in Burgundy, in the department of Yonne. The AOC Chablis extends over 3150 ha.
This wine must speak of its terroir, this magical minerality which is supposed to be born from the Kimmeridgian soil, as clayey and calcareous as the rest of Burgundy, but rich in small marine fossils, Exogyra virgula. From a basic Chablis, we do not expect an enormous complexity, just that hint of matter that the Petit Chablis does not have, with this evocation on the nose, of this maritime austerity.
Appellation Grand Cru of the vineyards of Chablis, in the Yonne. This appellation holds 7 Climats. The grands crus of Chablis are falling between two stools: the best bottles need 6 to 10 years of ageing, and will therefore offer less pleasure than a well-selected premier cru to an impatient consumer.
