17 hectares of vines are cultivated by the Domaine itself according to the organic ethics required by the Ecocert label. Domaine Duband also buys grapes from small winegrowers who cultivate their vines with respect for the environment.
In search of the right Balance and Truth of the Burgundian Terroir
"Elegant, racy wines with aromas of flowers and spices. Burgundy wines offering finesse and power, delicacy and intensity! ». This is what David Duband wished for his Grands Vins de Bourgogne. In Chevannes, in the heart of the Hautes-Côtes de Nuits where the estate's vat room is located, we do not talk about colour or tannins. We do not try to intellectualize the wine. The avowed objective is to obtain Great Wines capable of expressing the complexity of the precious Climats of Burgundy such as Nuits-Saint-Georges, Vosne-Romanée, Chambolle-Musigny, Morey-Saint-Denis or Gevrey-Chambertin.
In the heart of the Hautes Côtes de Nuits, Domaine Duband vinifies according to the Burgundian winemaking tradition. Since 2008, David Duband has been favouring whole harvest vinification (60 to 80% of the grapes are kept whole during maceration in vats) which gives the wines of the Domaine structure and finesse.
The Duband Wine Estate has chosen to switch to organic farming since 2006. A choice which simply imposed itself to David Duband first of all for the environment but also for the intrinsic quality of the wines. Because, for this passionate winegrower, the quality of a wine is comparable to a big chain made of multiple links. Removing or adding a link does not change anything in appearance, at least not immediately, but its solidity depends on it!
