Tasting notes : Golden amber in color, the Coteaux du Layon SGN Maria Juby reveals massive sweetness and ripeness on the nose and a viscous, full-bodied, very rich core of peach compote, apricot jam and caramel intertwined with sweet orange zest. This superb wine should be enjoyed over the next seven years to assess how it will fare with extended cellaring. Patrick Baudoin is one of the Coteaux du Layon producers nicknamed by some of their peers "sugar hunters". An intelligent and quality-conscious winemaker, Baudoin strives to get the maximum sweetness and concentration from his grapes. He refuses to chaptalize his wines, which the laws governing the appellation allow.
Presentation of the cuvée by the estate: "An exceptional cuvée, which we don't get every year; botrytis from the first selections, very pure, very candied, but with a lot of freshness. Wine of "Terroir" magnified by the "noble rot", this exceptional bottle calls for privileged moments; wine of "meditation", exchanges, reflections, pleasures or relaxation... But we also put it at the table, in gastronomy... The fatness, the nerve and the complexity of the wine will marry with foie gras, spicy curry of lamb, sweetened salted, citrus fruits... The agreement with blue-veined cheeses (stilton...) will also be explosive... Maria Juby, the great-grandmother who founded the Domaine in 1920, is a master winemaker.
Vinification and Maturing : To deliver wines, not to make them : not to act, or at least to do so, is a very demanding choice, requiring precision and sometimes...a lot of work ! No yeasting, no chaptalization.... Careful and very slow pressing - Natural settling for 24 hours - Slow fermentation in barrels of 1 and 3 wines. Aged in barrels and then in vats until bottling.
Nature of the soil and subsoil : Even if the Bruandières hillside in Saint Aubin de Luigné is particularly present in this vintage, all the plots of the Domaine are represented in a first passage mostly thin soils, not very developed on a base of carboniferous period. Presence of coal shale and sandstone. Also. alteration of ochre shales.
