Soil :Brown chalky and calcareous soils, presence of oxfordian marls.
Geographical situation : 2 plots of land situated above the village, south facing, very hilly, 20% slope with a plane propeller. Alt: 330 m.
Average yield over 5 years: 35 hl/Ha

Vine management: Working the soil, partial weeding, integrated pest management, leaf removal, manual harvesting, sorting in the vineyard before harvesting (verjuice, damaged grapes).
Vinification: Severe sorting in the vatting house, whole berries destemmed by gravity. Enzyming, yeasting, cold pre-fermentation maceration for one week, daily punching down of the cap, final hot maceration. Vatting for three weeks, manual de-vatting using gravity tanks in the stainless steel pneumatic press.
Ageing: 12 months in oak barrels, 1/3 of which are new, malolactic fermentation in barrels, then blending in stainless steel vats for three months. Light filtration 5 microns to bring more brilliance and aromatic purity.
Bottling : At the estate, great antique tradition bottle, cork stopper.
Tasting : Ruby-purple colour with purple glints, aroma of blackberries, redcurrant, cherry pit. A feline and wild evolution is not rare with time. Orientation towards leather, chocolate, pepper. A wine to be left to age a little so that it opens up fully. A wine for laying down.
Food and wine pairing : Braised or roasted game with hair and feathers, beef, lamb or stewed poultry. It also goes well with cheeses such as langres, époisses and comté cheese.
Serving temperature: 16° C
To be enjoyed ideally: 6 to 10 years.
