Meursault 1er Cru Les Charmes-Dessus 2018 - Vincent Girardin

GEOLOGY
The vineyards are located in the village of Meursault, in the southern part of the Côte de Beaune. The parcel "Les Charmes-Dessus" borders the village of Puligny Montrachet and is located just below the parcels of "Genevrières" and "Perrières". Soil: a very stony clay-limestone soil, therefore well drained, and rich in iron, with a southern and eastern exposure. Pruning is done in Guyot (Poussard) with various green works (disbudding, trellising, pollarding).
WINE MAKING
Hand-picked, sorted on the vines and then in the vat house and finally pressed (pneumatic press) to obtain a slow extraction.
BREEDING
Racking after a light settling. The grape must is placed in 228-litre French oak barrels (15% new barrels) in which the alcoholic and malolactic fermentations take place with indigenous yeasts and bacteria. The wine will be aged on fine lees for 18 months. No battonage. One month before bottling, the wine from the different barrels is placed in a stainless steel tank for blending. Racking before fining and light filtration before bottling. Bottling is done according to the lunar calendar.
TASTING
The palate is opulent between tension and finesse while leaving a fresh and mineral finish, well structured and long in the mouth.
METS
Fish, shellfish or white meat with a cream sauce. Serve at 12°c.
