Description
This deep purple Saint-Joseph has the fruitiness of black cherry, prune and tannins present but melted. Its great concentration gives it a fleshy and dense mouthfeel. The wine, the dishes This wine will give the best of itself between 5 and 10 years after its ageing, at a temperature of 14 to 16 degrees. It will be a perfect match with light game such as wild duck or with a fine and spicy dish.
Terroir
- Soil: light, sandy and granitic.
- Exposure: terraced to the south/south-east.
- Average age of the vines: 40 years.
- Yield: ≈ 35 hl/ha.
- Grape variety: Syrah (single variety).
Cultivation practices
- Cultivation method: traditional because entirely manual. No systematic treatment, but only when observation in the field requires it.
- Yield control: July/August: green harvest. Leaf removal. Grapes are 100% destemmed.
- Vatting: stainless steel vats between 15 days and 3 weeks, temperature controlled.
- Maturation: in barrels for 18 months in air-conditioned cellars. Temperature and hygrometry control.
