WINEMAKING :

  • 100 % heart of cuvée (1st and 2nd press)

  • natural settling of the juice
  • fermentation in 600L oak demi-muid
  • maturing on lees for 9 months
  • natural cooling
  • no filtration
  • manual disgorgement

AGEING :

  • 36 months in bottle
  • 3 to 6 months after disgorging

CELLARING POTENTIAL :

drink now or keep for 3 years

TO TASTE:

  • Serve at 12°C
  • do not leave the wine in a cool place for several days, tartar may form and cause a significant effervescence
