- VINIFICATION : After total or partial de-stemming depending on the vintage, fermentation in small containers and gentle pressing ensure optimal vinification. Depending on the profile of the vintage, vatting can last from 15 to 20 days.
- AGEING: 12 to 14 months in French oak barrels, with 40 to 50% new barrels.
- AGEING: The cellars of the Bastions of the former Château de Beaune offer natural environmental conditions perfectly adapted to the ageing of the Premiers Crus.
