William Kelley in 2019: "Aromas of oats and beeswax blended with notions of ripe lemons, flowers and oyster shells in a bouquet of great complexity introduce Chablis 1er Cru Butteaux Mise Tardive 2017, a medium to full-bodied, deep and layered wine with a fleshy core, dry extract and chalky finish. Pico told me that it will take 24 months on the lees before it is bottled.
About the cuvée: Butteaux is the new name of the Montmain cuvée.
The winemaker: Thomas Pico quickly gained a well-deserved reputation as one of the brightest rising stars in the Chablis firmament. Pattes Loup is a kind of exception in Courgis. Its plots are distinguished by their soft, ploughed soil, in a region where the vines often resemble a barren moonscape.
