GEOLOGICAL FEATURES
Kimmeridgian marls covered with brown to reddish clays that are quite deep and ensure good water availability even in summer.
VITICULTURE
Viticulture in integrated pest management. Soil maintenance through regular ploughing.
VINIFICATION
Pneumatic pressing. Enzymatic settling 12 to 24 hours at 15°C then fermentation in indigenous yeasts partly in stainless steel tanks and partly in barrels.
Systematic malolactic fermentation and blending after 8 to 10 months. Fining if necessary, light filtration and bottling.
TASTING / AGREEMENTS
With a clayey and relatively deep soil, the wines are very rich and massive. This richness gives a sensation of moderate acidity, so the wine has more of a Burgundian style than a Chablis style. It can be enjoyed very well young with its notes of hawthorn, lily and peach. It is a very broad wine but it makes you salivate a lot. With time, the wine will become more tender and take on a more salty and iodized side and thus regain a more Chablisian identity.
It goes perfectly with noble fish or white meat in sauce.
