VINE AND TERROIR
- 1ha of old vines.
- Vineyard located on the South side of Pommard (Volnay) at the foot of the slopes. Brown calcareous soil on hard limestone and scree.
- The young vines of this terroir are vinified separately and constitute our cuvée of "Pommard 1er Cru".
- Yield: 35-40hl/hectares
VINIFICATION
- Manual harvesting.
- Grapes sorted, destemmed, not crushed ; Pre-fermentation maceration, native yeasts.
- Gentle and long fermentation in stainless steel vats, Moderate punching pigeage, vatting for 18 to 25 days.
MATURING
- Matured in cold cellar on lees, in barrels, 30% to 50% of new barrels (origin of the wood Centre France and Vosges).
- Racking after 18 months.
- Bottling without filtration.
