- The Clos du Chêne Vert is one of Chinon's mythical sites, located in the town itself, in Haute Olive, on the right bank of the Vienne. The very steep slope of this two-hectare vineyard, its south-western orientation and its clay and silica-limestone soil explain why it is one of the oldest crus in the entire appellation. The place owes its name to the monumental holm oak tree which overhangs it, the regrowth of an eight hundred year old tree planted by the monks of Bourgueil Abbey in the 12th century.
- Average yield: 30 hl/ha
- The numerous ripeness checks carried out for all the vintages to determine the optimum date for harvesting generally result in this Clos being harvested at the very beginning. Its exceptional exposure and its hillside terroir give us the first musts of each vintage. The duration of maceration and vatting are similar to those of Les Varennes, with the specificity, from the 2008 vintage, of being carried out in wooden vats. Pumping over and punching down (sinking the cap of marc into its juice) help to extract the substance and the colour. The alcoholic fermentation is sometimes followed by malolactic fermentation on the marc, which adds roundness and fatness. A prolonged maturation in barrels of 1 to 3 wines (12 to 15 months) finishes refining this wine of a rare personality. This is a very long-keeping wine that should be kept in the cellar for several years to reveal its originality.
