Appellation d'origine protégée Languedoc Montpeyroux
- Winemaker : Gil MORROT
- Vines: located on the place called "Les Boissières" in the commune of Montpeyroux (Hérault, France). They were planted in 1971 and 2006. The vines are cultivated without any synthetic product. The vines have been de-caulked.
- Soil : clay and limestone (glacial scree).
- Grape varieties : Grenache 70%, Syrah 20%, Mourvèdre 5%, Cinsault 5%.
- Use only of "Organic" products although the domain is not yet declared as such.
- Yield 15 hl/ha.
- Manual harvest, grapes destemmed.
- Traditional vinification:
- Long maceration (8 weeks for the grenache and 4 weeks for the syrah)
- Slow fermentation: the grapes are not crushed.
- Daily pumping over.
- Pigeage from the third week of vatting.
- Aged for 18 months in Taransaud barrels (barrels of 2 wines).
- Wine not fined, not filtered.
- Alcohol : 15.4% vol.
- Total SO2 : 30 mg/l.
