Bourgueil Perrieres 2018 Domaine de la Butte - Jacky Blot
Grape variety: 100 % Cabernet Franc.
Average age of the vines: 40 years.
Soil: This plot of 0.8 ha is located to the east of the estate on a hilltop, whose structure is practically identical to that of Mi-Pente. The slope is light, facing south. The limestone is here covered by a layer of clay.
Vine management: Simple Guyot pruning; Yield control before flowering; Ploughed vines; Manual harvesting; Harvest sorted on tables at the end of the rows; Transport of the harvest in crates.
Yield: 30 hectolitres per hectare.
Vinification: De-stemming, fermentation in wooden vats ; No yeasting, no chaptalization ; Daily punching down of the cap for 10 days ; Pumping over ; Vatting for 3 weeks ; Malolactic fermentation in wooden vats.
Ageing: 20% new barrels; 40% 1-wine barrels; 40% 2-wine barrels; Bottling in November, without filtration or fining.
Impressions: Perrières in terms of structure is practically identical to Mi-Pente, these two vintages come from the same geological vein of mid-slope. Thanks to its suppleness, this wine can be appreciated quickly. Its fleshy aspect without tannic rigour makes it voluptuous.
Serving: The structure of the wine today requires about 10 hours of aeration; Can be kept for 8 to 10 years; Serving temperature 16°.
Food and wine pairing: Very good with all kinds of meat that are a little tasty or simmered: beef, lamb, etc...
