DESCRIPTION
La Digoine comes from vines located at the foot of the hillside where the soil is deeper. This place called "La Digoine" has been known for centuries for the quality of the red wine produced there. We have planted here selections of fine Pinot Noir with moderate yields.
La Digoine can be enjoyed very young: two or three months after bottling, it immediately seduces with its aromas and flavours of red berries, its balance between roundness and firmness and its length in the mouth. After 18 to 24 months, it evolves and matures slowly. It is then better to wait about ten years to discover its deep and complex aromas worthy of a great Burgundy. La Digoine can be kept for 12 to 15 years depending on the vintage and the cellar.
When young, it should be served around 16 degrees, older around 18 degrees, with red meats and many cheeses, but avoid soft pasta such as Camembert, Brie or Vacherin.
TASTING
Vinified in wooden vats for 14 days and then matured in barrels of two to five wines.
Its nose seduces at once by the depth of the fruit, by its power. Its mouth is incredibly fine for a Pinot Noir at this level of appellation. The ripe and silky tannins give the wine a thickness, a depth which augurs well for a good ageing potential. The aromatic identity of the Digoine is preserved.
Drink now on the fruit, taking care to open the bottle a few hours before or wait about ten years to discover its deep aromas and feel the wine gain in complexity.
