Domaine Moret-Nominé (David Moret)

David Moret is a young and very small merchant settled in an alley in the centre of Beaune. Since 1999, he has specialised in the vinification and maturing of white wines, particularly those from Meursault. His entry into the Nominé family has given him access to the family vineyards but also to the grapes of high quality estates, with which he has built a relationship of trust.

He can thus impose strict quality criteria: reasonable agricultural practices, i.e. with the use of phytosanitary products limited to what is strictly necessary; use of organic fertilisers; ploughing of the soil; limited yields and protection of the bunches at harvest time (harvested in small crates so as not to damage them).

His mastery of winemaking combined with the quality of the grapes, leads him to produce wines of great aromatic purity, very concentrated, with a lot of freshness and which are an exact reflection of the different terroirs.
