GEOLOGICAL CHARACTERISTICS
On this hillside, several types of soil coexist, all of them coming from the same Kimmeridgian. At the top, erosion is stronger and the soils are stonier and more chalky, whereas at the bottom they are deeper and more clayey. In the middle there is a band of blue clay.
VITICULTURE
Viticulture in reasoned fight. Soil maintenance by regular ploughing.
WINE MAKING
Pneumatic pressing. Enzymatic settling for 12 to 24 hours at 15°C, then fermentation with indigenous yeasts, partly in stainless steel tanks and partly in barrels.
Systematic malolactic fermentation and blending after 8 to 10 months. Fining if necessary, light filtration and bottling.
TASTING / PAIRING
This is the lord of the Grands Crus. It produces wines of exceptional straightness and power through its volume and intensity. It expresses a wide range of aromas with notes of ripe fruit such as peach, but also oyster shell and smoke. The palate impresses by its freshness, its power and its mineral balance. There is a fine reduction carried by iodised flavours of oyster shell, lemon and flint. This is a great complex wine with exceptional ageing potential. It will go well with all noble fish (monkfish, turbot) or with more spicy dishes such as sushi.
