- This is Fanny Sabre's "coup de coeur" wine which translates into "her absolute favorite bottle"! Clos des Renardes shows structure, elegance and complexity of refined red fruits and earth.
- Food pairing : Pair it with roast lamb; mushroom-based dishes or tender and delicate beef meats such as rib steaks, sirloin etc.
- Terroir : Clay-limestone soil
- Age of the vines : 40 to 50 years
- Vinification : The grapes are harvested by hand. Maceration in stainless steel vats for 4 to 5 days. Soft pressing and natural fermentation (with indigenous yeasts) in oak barrels for 15 days. The wine is aged in new oak barrels for 15 to 18 months.
- Alcohol content : 13.00%.
- Ageing potential : Ready to drink or to keep for 5 to 10 years.
