LOCATION AND CLIMATE
The Hautes-Côtes vineyard is located in the "hinterland", in parallel to the Côte de Nuits, on the plateau. The numerous small valleys with well exposed hillsides, generally to the south and south-east, offer an ideal location for exceptional for the vine.
The climate of the Hautes-Côtes is a little rougher than that of the Coast, the air circulates more along the valleys and hills, with temperatures as low as -15°C sometimes. However, the climatic conditions are very favourable to the cultivation of the vine, exposure compensating for altitude influences.
GRAPE VARIETY
The Bourgogne Hautes-Côtes-de-Nuits Blanc is fully made from the Chardonnay grape variety. It is one of the noblest grape varieties and has imposed its name of "Chardonnay" during the 19th century in his Burgundian cradle. Quite vigorous and of a good fertility, it fears the cold, especially the spring frosts. Its elongated, loosely packed bunches offer small grains of a beautiful golden colour.
CHARACTER OF THE WINE
This terroir offers a well-balanced and fine wine, its structure is elegant and solid at the same time with a beautiful firmness attenuated by the mellow Chardonnay. This cuvée stands out for its aromas of fresh fruits, white flowers, linden and beautiful mineral nuances.
GASTRONOMY
The wines will go very well with fish, trout, all crustaceans, a crayfish cassolette façon nage, frogs à la Bressane, or a fish terrine à la Provençal.
