- Grape varieties : Mourvèdre 85% ; Carrignan 15%.
- Tasting at the domain : "This cuvée was born in 1987 from a desire to isolate the finest Mourvédre of the Domaine; but without harming the Domaine's red wine. The Saint Ferréol will only be produced when the classic cuvée has a good balance on its own.
- Somewhat spiritual by name, sometimes impenetrable by color, the Saint Ferréol pays homage to this grape variety that is both omnipresent (90% in this wine) and so difficult to pin down, and our little land of mixed soil types. Introspective, rigorous, straightforward, its spicy, peppery mouthfeel leaves a mineral imprint reminiscent of our sandstone. Tobacco, truffle, lily mingle with the acidic note of Carrignan. The contribution of the Carrignan opens the wine, makes it brighter in its dark retreat."
- The name of the cuvée: For the record, the choice of the name was made by chance, it turns out that this religious military saint was excluded from his order because of his excessive rigor. The verticality of the wine joins that of the vine and of this Saint who would have finished his life standing on a stake... Mourvèdre, a Spanish grape variety, also behaves like a bull, with its horns in the air and its feet deep in the earth. It calls for blood in its pairings with a dish. A serano with a twist of Sechuan pepper mill certainly suits it well.
