Tasting : "The Quarts de Chaume Grand Cru Les Zersilles, with its golden-apricot color, is deep, precise and fresh on the spicy mineral bouquet with a darker tone, with flinty stone fruits and some vegetal aromas. Made from 50 year old vines with a yield of 11.7 hectoliters per hectare and aged in small oak barrels. It is a sweet, noble, remarkably dashing and fine wine, with concentrated but still stimulating salty-spicy fruit aromas and a sweetness lifted by a spectacularly playful and elegant acidity, and also held in the mouth by firm and serious tannins. The QDC is not as sweet and rich as the hedonistic Marie Juby, but it is quite gastronomic.

A wine for meditation, late at night, but never hesitate to put it on a nice table either, with spicy, sweet and salty dishes...pan-fried foie gras, spicy lamb curry. "
Vinification and Maturing : No addition of evures, very slow fermentation in barrels
Nature of the soil and subsoil : The Zerzilles hillside in Chaume has been renowned for a long time. Exposed to the south east, it is
perfectly adapted to the production of exceptional sweet wines. Thin soils, little developed
on a carboniferous basement. Presence of coal schists and sandstone.
