Cut in simple guyot. The soil is cultivated mechanically with several ploughings per year. The vine is disbudded to clear the medium and to obtain an optimal sanitary state of the grapes. The leaves are removed from the vine, this work represents an alternative solution to avoid the use of anti-botrytis. The grapes are hand picked and put in crates, they are then sorted in the winery. It is a very early parcel, the harvest is very early. often begin with this vine. The work of the vine is in conventional reasoned fight. 100% destemmed then received in stainless steel tanks by gravity, the berries are then put in vats for a pre-fermentation cold maceration of 5 days (12°). Fermentation is natural with the indigenous yeasts present on the grapes and in the vat room. Alcoholic fermentation in vat and malolactic fermentation in barrels. Very little punching of the cap, the liftings are privileged daily at a rate of 2 per day. Devatting after 15 to 20 days then pressing. The wine is put in barrels (30% new barrels) for 12 months. After a light filtration, the wine is bottled. We suggest to drink this wine at 17° by decanting it during the first years. Its optimum is around 5 years. It can be kept for up to 8 years.
