This wine for laying down oscillates between power and solidity, with very silky tannins on the palate and a mineral finish that brings freshness. This wine gradually matures, evolving towards a more suave texture after a few years.

- SOIL: Soil composed of marl with little limestone

PRESENTATION: This vineyard is pruned using the Royat cordon method. The soil is cultivated mechanically, with several ploughings per year. The vines are disbudded to lighten the environment and ensure optimal grape health. The vines are thinned out, an alternative solution to the use of anti-botrytis treatments. The grapes are hand-picked and crated, then sorted in the winery. The vines are tended using conventional integrated vineyard management.
VINIFICATION: The grapes are 100% destemmed, then gravity-fed into stainless steel tanks. They are then placed in vats for a 5-day pre-fermentation cold maceration (12°). Fermentation is natural, using the indigenous yeasts present on the grapes and in the winery. Alcoholic fermentation in vats and malolactic fermentation in barrels. Very little punching of the cap is carried out, with 2 pump-overs per day. De-vatting after 18 to 22 days, then pressing.
AGEING : The wine is barrel-aged (30% new barrels) for 12 months, then racked to finish the last 6 months in stainless steel tanks to refine the tannins. After 2 winters in the cellar, the wine is lightly filtered before bottling in spring.
SERVICE : Decant for the first few years. This wine can be kept for 5 to 10 years. Temperature 18°.
