Morey St Denis Cuvée des Grives 2016 - Ponsot
Character of the wine :
Most of the vineyard comes from Pinot Noir. However, a few plots are planted with Chardonnay or Pinot Blanc: a rare and interesting white wine, generally quite firm and opulent. Red: its most usual colour is full, with an assertive tonality (bright ruby, carmine, intense garnet) with purplish reflections. The bouquet is divided between black fruits (blackcurrant, blueberry) and red stone fruits (cherry). It has variants: sloe, bramble, violet, carnation, liquorice, fruit in brandy. With age, it often evokes the hunting party (leather, moss, game): it truffles! Sustained, structured, this wine awaits you on the palate: the right balance between the strength of the body and the expression of the fruit. A tenor voice in the Burgundian chorus, it knows how to round out its tannins and offer a generous flesh.
Cellar master's advice:
Red: faithful to its "Côte de Nuits" origin, i.e. masculine, powerful and ample in the mouth, the red Morey-Saint-Denis is content especially meats of character. Its tannins will enhance the value of a poultry wilder than a young calf. Hairy game, when braised or roasted, shall be caressed by its fleshy texture and its sustained tannins will resist until the complete extraction of juices from these musk meats. These same tannins will give all its relief to a beautiful entrecote or prime rib. very thick. Washed-rind cheeses will also find a partner of a perfectly respectable character.
