Tasting notes by William Kelley: "Chassagne-Montrachet 1er Cru Clos Saint-Jean 2021 opens in the glass with notes of peach, white flowers, citrus oil and light honey. Quite full-bodied, taut and racy, with a satiny attack and a long, saline finish; it combines cut and concentration to irresistible effect".

- Presentation of the estate : Domaine Paul Pillot, with a surface area of 12 hectares, has been managed since 2004 by the young and dynamic Thierry Pillot. The vines on the estate's enviable range of estates are organically grown, though not yet certified as such, and the wines they produce are aged for around 18 months on the lees, the last six in stainless steel. The percentages of new wood are modest, with many of the larger 350-litre casks, and the lees are never stirred. These are superb white Burgundies, full of character, elegant texture and mouth-watering incisiveness. In my opinion, Pillot is one of a handful of exciting producers who have made Chassagne-Montrachet the most interesting white wine producing village in Burgundy today.
