Meursault White Les Clous 2016 - Vincent Girardin

GEOLOGY
The vines are located in the commune of Meursault. The parcel "Les Clous" is located to the west of the village, next to the climat "Les Tillets". Soil: marl identical to the Grand Cru Corton-Charlemagne (only the topography and altitude change). Pruning is done in Guyot (Poussard) with various green works (disbudding, trellising, pollarding).
WINE MAKING
Manual harvesting, sorting on the vines and then in the vat house and finally pressing (pneumatic press) to obtain a slow extraction.
BREEDING
Racking after a light settling. The grape must is placed in 228-litre French oak barrels (15% new barrels) in which the alcoholic and malolactic fermentations take place with indigenous yeasts and bacteria. The wine will be aged on fine lees for 15 months. No battonage. One month before bottling, the wine from the different barrels is placed in a stainless steel tank for blending. This is followed by a light fining and filtration before bottling. Bottling is done according to the lunar calendar.
TASTING
A brilliant golden colour. A very fine nose marked by citrus notes. A mouth with a very strong mineral character, a very good acidity which announces a great potential of ageing.
METS
Grilled, poached or grinded fish. Fish in sauce such as pike with beurre blanc or salmon with sorrel. Serve at 12°c.
