Puligny Montrachet 2017 - Domaine de Montille

 

The name:

In 1175, this village is named Puliniacum (titles of the abbey of Maizières) which evokes a term of the former French Pol "mare/eau". The village of Puligny was built on the water table that outcrops, which explains why the cellars are shallow. The wine of Puligny often reveals clear dresses with light green tones, fine, mineral noses combined with aromas of white flowers and a light, elegant texture.

Our Puligny-Montrachet is quite unique because three quarters of the cuvée comes from a 1.1 ha plot of land located in the AOC Puligny 1er cru "Les Chalumeaux" which was downgraded when it was replanted in 1975 by the INAO because the former owner had brought about 20 cm of exogenous soil, which is prescribed by the specifications. Since then, both erosion and organic farming have caused the roots to plunge back into the original terroir, which gives our Puligny-Montrachet an unusual density and complexity for an AOC village which places it halfway between a very good AOC village and a 1er Cru.

It is the only vine in AOC Puligny-Montrachet to be in the middle of the hillsides, in the middle of the 1er Cru. The two other parcels are located in "Lervron" and "Baudrières-Nosroy" for 0.38 ha.

The wines, the style : 

 

Our wines are renowned for their great aromatic purity, we always favour balance and elegance rather than power and extraction. The wines are a classic expression of Burgundy, their appellation in general and their terroir in particular. The cultivation methods used contribute to this sought-after personalisation and the vinification process must avoid all excesses and instead seek the point of balance where the Burgundy terroir will find its rightful place.

The harvest is entirely manual and thanks to the use of pneumatic presses, we can modulate our presses according to the quality of the grapes and the profile of the vintage. After a light settling, the musts are put into barrels, mainly of 600 litres and also of 228 litres, where the alcoholic and malolactic fermentation takes place.

We use about 5 to 20% new barrels with wood coming essentially from the Allier, with a long and light toasting. The first racking takes place after about a year of maturing in wood to begin the second phase (4 to 6 months) in stainless steel vats in order to keep the wine fresh and taut. We conclude this ageing process with a light fining followed by an equally respectful filtration of the wine before bottling.

 

Cultivation of the vine: 

The wines previously produced under Château de Puligny-Montrachet will join Domaine de Montille from the 2017 vintage onwards. We introduced organic farming on the entire Château de Puligny-Montrachet estate in 2002. Our wines are certified ECOCERT. Since 2005, biodynamic farming has complemented these practices, which are respectful of the soil and of life.
