Tasted by Jeb Dunnuck on December 30, 2016 : "The flagship wine is the 2015 Côtes du Ventoux Il Etait Une Fois and this is still a Grenache-dominated vintage with small amounts of Syrah and Mourvèdre. De-stemmed and aged in foudre, this is a fresh and elegant example of the vintage that abandons notes of raspberry, black raspberry (even a hint of fresh plum) to go with plenty of floral characteristics, medium to full-bodied richness and ripe, polished tannins. It needs 2-3 years in bottle and will shine over the next decade."
This cuvée is only produced on exceptional vintages and in limited quantities. Soil, subsoil, micro-climate, unique exposure in the quest for perfection.
Terroir : The Fondrèche plateau is made up of ancient alluvial deposits. The soil is very stony (rolled pebbles, flint and crystalline) and chalky from the surface with a sandy-clay texture.
Grape varieties : 80 % old Grenache from 1936 and 1938, 10 % Syrah, 10 % Mourvèdre
Vinification & ageing : Traditional, 14 to 21 days vatting time with only a few small punchings of the cap to favour a slow and progressive extraction.
Ageing: 12 months on lees in tuns for the Grenache and in barrels for the Syrah and Mourvèdre. Bottled on the fruit day.
Tasting: The wine opens with notes of raspberry, pepper and garrigue. The palate is long with spices and cocoa. A wine that is longer than it is wide, with incredible finesse, silky tannins and a rare freshness.
